Good Carb, Bad Carb, Zero Carb

I used to feel like crud all the time - tired, low on energy, and plagued by constant brain fog.

Instead of running to the doctor for a diagnosis and pills, I decided to overhaul my diet.

Two of the biggest changes I made - eliminating inflammatory foods and closely monitoring my carb intake.

Systemic inflammation comes from the food we eat.

Years ago, I ditched gluten when I switched from the Standard American Diet to the Paleo Diet.

That was a game changer for me, as the glyphosate and folic acid sprayed on wheat were massive irritants for me.

However, I was still consuming nuts and nut butters, broccoli, brussels sprouts, spinach, kale, corn chips and tortillas, beans and legumes, plus a whole host of spices and seasonings I was drowning my food in were causing havoc.

Eliminating those culprits that were causing - low energy, doubled-over gut & stomach pain, rashes, and joint issues - made a huge difference.

Switching to the Carnivore Diet saved my life. 

Without that change, some doctor would have started throwing pharmaceuticals at me, which would have just masked the issues.

Now here is where the fun begins…..

I started experimenting with carb ranges, to see what the effect would have on my energy levels.

At this point, my carbs came from fruit, honey, white rice, sweet potatoes, and a few non-inflammatory veggies.

I felt great, but “good carbs” are easy to overeat and shedding body fat can be challenging.

So I started meticulously tracking calories and macros and dialing down carbs down to 5g to 20g per day.

This put me into a deep state of ketosis, where my body was running on fat (dietary and stored body fat) instead of carbs.

The result? I feel absolutely amazing!

I’m convinced that the damage from eating the Standard American Diet and Paleo Diet left me hypersensitive to carbs and inflammatory triggers. 

Every time I have a cheat meal or overindulge in “good carbs” my body reacts by retaining water (5-7 pounds) which usually persists for 4-5 days.

This 6-year experiment involved tons of A/B testing and constant refinement to finally arrive at a way of eating that is helping me thrive.

Everyone’s different, but if you’re battling the same inflammatory symptoms I did, you might want to rethink those “bad carbs” and “good carbs” we’re told to eat.
